Ingredients
  

  • 400 g artichoke hearts (canned, drained)
  • 2 tbsp olive oil
  • 50 g breadcrumbs (panko or regular)
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 100 g vegan mayo
  • 1 lemon (zested and juiced)
  • 1 tbsp capers (drained)
  • 1 clove garlic (minced)

Instructions
 

  1. Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper.
  2. In a bowl, mix breadcrumbs, garlic powder, and salt.
  3. Pat artichokes dry, toss with olive oil, then coat in breadcrumb mixture.
  4. Arrange on baking tray and bake for 20 minutes, turning halfway, until golden and crispy.
